Ingredients

  • 300 g (2/3)skinless salmon fillet, diced
  • 500 ml (2 cups)garlic mashed potatoes
  • 2 egg whites
  • 60 ml (1/4 cup) mayonnaise
  • 3 green onions, chopped
  • 60 ml (1/4 cup) dill, chopped
  • 1celery stalk, finely diced
  • 15 ml (1 tbsp) lemon zest
  • Salt and pepper to taste

Preparation

  1. Preheat the oven to 205°C (400°F).
  2. In a bowl, mix the diced salmon, mashed potatoes, egg whites and mayonnaise until evenly combined.
  3. Add the green onions, dill, celery and lemon zest. Season with salt and pepper and stir.
  4. Grease all 12 cups of a muffin tin and divide the mixture among the cups. Bake for 20 to 25 minutes.
